If you half-depress the shutter button, the camera does its focusing and then stays put. Then you can move the scope and have something else in the middle of the image, while the bird remains in focus. This allows you to play around with composition a little bit! Because the camera is already focused, it also means that you only have to fully press the shutter button to take the picture (as opposed to refocusing and then taking the pic). The reaction time is much, much faster. I will have to investigate this properly...
